and it is oh so good. i of course couldn't help but share it with y'all too!
here's what you'll need:
1 lb bacon, sliced into 1 inch pieces
1 large onion, chopped
9-12 garlic cloves, sliced
1 cup of white wine (i personally love to use pinot grigio or vino verde)
1 cup of chicken broth
1 lb of linguine pasta
4 eggs
1 1/2 cups of parmesan cheese
1/2 stick of butter
first, heat up a large pan on medium-high heat and add in your bacon. cook until nicely browned and delicious....see below, mmm!
meanwhile, heat a large pot of water on medium-high heat (sprinkle a little salt in for good measure). when at boiling, add in your linguine and cook to al dente.
once the bacon is cooked, use a slotted spoon to scoop out the goodies for use later. do NOT pour out the bacon grease, this will add in all the yummy flavoring for the dish! now, add in the chopped onions and toss in the mixture for a couple of minutes.
then add in your garlic cloves and mix through until cooked for a couple minutes. mm, have you stuck your nose in to smell the deliciousness? i am probably one of the few people who loves the smell of garlic and onions cooking. maybe since it usually leads to an amazing dish to be had! any who, back to the recipe..
once the onions and garlic are cooked, use your slotted spoon to scoop out the goodies and keep with your bacon for use later. now, to deglaze the pot! while the pan is still on high heat, add in your white wine and using a whisk, scrape all the gunk off the bottom of the pan. this part may take a little extra elbow grease but it is worth it! just think of it as the special ingredient to the dish ;)
once the pan is completely deglazed, add in the chicken broth and mix together for a couple minutes.
remember all your goodies you had sitting in the wings? now it's time to add them all back in and get them mixed together.
by now your pasta should be completely cooked; drain it and return it back to the pot. in a bowl, mix together your eggs and parmesan cheese. once it looks like the picture above, quickly add it to the hot pasta and mix together.

until it looks like this. once it's fully mixed, add in your butter and the mixture from the pan (bacon, onions, sauce, etc)
dish out, garnish with a little extra parmesan and enjoy! oh, a note of caution, be aware your breath will repell vampires, hot dates, and pups from a mile away. so maybe you can make this for a group of friends so no one notices your a-mazing breath :)
