peach salsa

 
it's friday! so let's celebrate with chips and salsa. but, this time, we will add a summer twist to it with peaches. yum. this recipe is just too easy to not share and too easy to make it your own.
so let's get started!
 
here's what you'll need:
 
one large avocado or two small ones, sliced into large cubes
1/4 of a red onion, chopped
3 small tomatoes, diced
3 peaches, sliced into large chunks
half a bundle of cilantro, roughly chopped
one lime
olive oil
salt and pepper to taste
 

 

directions:
1. place your peaches, cilantro, avocado, tomatoes and onion in a medium-sized bowl. drizzle olive oil over the mixture and stir to coat. you don't want to over saturate the mix, so pour enough to help keep the mix from sticking and getting dried out later.
2. slice your lime in half and squeeze both halves over the mix. stir around to coat.
3. sprinkle with salt and pepper to taste.
4. serve up on fish, pork or chicken tacos, chips, grilled chicken breasts or feel free to eat by itself! (which i have definitely been known to do)

***added tip***
you can substitute peaches for nectarines, mangoes or strawberries by availability. all are equally delicious!

the quest

 
ever since i was little, i have wished i liked hotdogs. now, i know that sounds strange but, every year, summer would come around and it was the thing to eat. at pretty much everything! bbqs, birthday parties, festivals, you name it. i would enviously watch my friends enjoying their grilled-up summer treat wishing i could eat them. to clarify, i couldn't eat hotdogs because of some allergy or dietary restriction. i simply didn't like the flavor. but, you know where you see someone eat something that looks so good you want to have some too? that was me! so every summer, at least a few times that season, i would try again and again with no luck.
 
and any time a friend or family member would hear about it, they would recommend i try fill-in-the-blank type of hotdog. i cannot tell you how many types and fixings i've tried. so, flash forward to about a little over a month ago. T had found a new 'dog place on campus and thought i may want to try it. feeling optimistic, we went out and i ordered the chili dog...




and, for the first time in my life, i LOVED it! i still can't believe after all that time and effort, i finally found one that i liked. so, i can happily say now, that my mini quest has been fulfilled...at long last :)

local

 
a few days after our engagement, i met up with a couple of close friends for a girls dinner to celebrate. we decided to try out local - a sweet little restaurant that uses locally farmed produce to inspire their weekly and seasonal dishes. i had heard their food was dynamite but was told their drinks were out-of-this-world! which, after trying it, have to say i agree on both.
 

 

 
personally, i loved the ratatouille and the banana split sundae. i still cannot think about either withoout drooling a little!



we had such an amazing time with great food, drinks and general girliness. can't wait to go back!

this weekend should be a great one. friday, T and i are taking it easy after a long week with a 90s action flick marathon, saturday, going to our friends' wedding reception and sunday, we are heading to tulsa for the day to annouce our engagement to my grandparents! i'm so excited just thinking about their reaction and simply cannot wait :)

tiny details

 
last month, while back in tulsa for the weekend, i met up with one of my close friends, spencer, downtown. after catching up over lunch, we decided to take a walk around the area while he pointed out little architectural treasures in the buildings. tulsa, if you didn't know, has a gorgeous art deco and gothic collection. and while i was familiar with some, i have rarely taken the time to notice the time and details put into so many others.

a sweet story...

 
sorry for the gap in posts but, something amazing happened not too long ago. however, i felt that pictures better tell what i am still too in awe to eloquently say...



 
T and i got engaged! it was a complete surprise he planned with our closest friends (with those that couldn't make it being here in spirit) present. it was so sweet and so thoughtful and so absolutely perfect.








so happy and so so thrilled for this next step in our lives!
