springy nights

the past few days T and i have been feeling the call to the outside to soak up the amazing spring weather before summer sneaks up on us. now you may not know this but oklahoma doesn't necessarily get your typical spring season. it's more of two weeks of crisp weather followed by months of heatwave over 100 degrees. but this year by some form of magic we have had over a month of it! it's been beyond glorious to say the least! so most nights we've been taking to the local patios for drinks and snacks to our heart's content.

thursday T, caroline and i went to the mont for burgers and happy hour to celebrate the weather and the almost end to the week :) T, brian and i then followed it up the next night with a visit to the wedge - an amazing pizzeria in the city which i have to say i am a huge fan of now!

while brian and T's faces may look as if they disliked the pizzas, it was completely opposite...they loved it (so did i by the way)! there was so much flavor you would have thought we went to a pizza-like heaven! and to top off the great pizza we had what else, but freshly made gelato.

i hope this spring weather holds on for a little bit longer so we can have more nights like these...sigh. oh please spring, say you'll stay a little longer?!

kiddie toys

this past weekend T and i went back to tulsa to celebrate my papa and cousin's birthdays! i was so excited but more importantly my mom was so excited to have my 4 year old cousin over to play. she isn't very talkative yet so my mom and i got some fun toys to play with her. we figured (or really, my mom figured) bubble toys and chalk would be best. while we waited for everyone to get there, T and i couldn't help but play with everything...i mean, we HAD to show how fun it would be when she got there right? i have to say, we did get a little carried away and completely forgot how much more fun kiddie toys were than adult toys! i have got to remember to keep bubbles and chalk for any lazy sunny days ;)

a day for a hike + climb

last weekend T, our friend brian + his pup, our pup and i went to the wichita mtns for some hiking and rock climbing! the weather was expected to be the perfect sunny day so we made a day of it. now for the record, i am not big on rock climbing - the boys mainly stuck to that but hiking is one of my favorite past-times so i came along :) all of the local wildlife and foliage made for some really great photos, hope you enjoy!

this photo is blurry which you'll have to excuse but i loved these longhorn cattle lining the state park trail to the mtns

if you are wondering if this is a real bison, you are correct! they freely roam the mtn range. if you are wondering how we could be so close it works on the bee principle "if you don't bother them they'll leave you alone"

i love this photo of the two pups watching the guys hike up to the climbing point. they were so upset they couldn't go there

how great is this view?!

my stud...

i love this photo (and have so many just like it that i took that day but will spare you from seeing them all as i know not everyone wants to see 20+ pictures of just him)! the pup was so happy running around on the trails, swimming in the creek and looking out over the mtn...pretty much just being a wildpup. i'm pretty sure he dreams of when we will go back next :)

foiled fish

while my post title sounds as if something went wrong with this fish, it was so opposite! this recipe is so yummy and SO easy. when i made this i used halibut as my fish of choice but really you can use any type of light fish.

here's what you'll need:

1 lb of fish sliced in half
fresh spinach
20 cherry tomatoes, sliced in half
1/4 of a red onion, sliced in long strips
1 lemon
evoo for drizzling
salt and pepper, to taste
aluminum foil

tear off a large piece of aluminum (make sure it is big enough to fold over on all sides to seal up the mixture prior to placing in the oven

preheat the oven to 400 degrees

places a large handful of your spinach in the center of each foil and drizzle lightly with evoo

season your fish with salt and pepper; place on top of the bed of spinach

sprinkle sliced red onions over both pieces of fish

sprinkle tomatoes over mixture; make sure some of the tomatoes are on the fish

squeeze your halved lemon over each piece of fish and drizzle the entire mix with evoo

fold sides of aluminum foil together and make sure the fish and mixture are well sealed so no juices seep out; place both foil packets on your cookie sheet and place in the oven

cook your packets for 18-22 minutes

once your timer has gone off, take packets off the cookie sheet and unfold your aluminum foil (be careful in unwrapping so that no juices spill out)

grab a fork and dive in while still in the foil or plate

enjoy!

over the weekend

friday night T and i made our way over to our neighborhood deli for some yummy pulled pork sandwiches and a little local musical delight. the person featured below is a homegrown tomato by the name of camille harp who has a way with writing songs and a folky rasp to her voice. i kind of have something of a girl crush on her and you would too if you heard her. plus i always love a fellow curly girl ;)

then sunday we made our way to tulsa to see a sweet indie band by the name of edward sharpe and the magnetic zeros. i have been dying to see them in concert and even though it meant we had to drive there and back (same day..boo), it was worth it!

we first stopped at my favorite mexi restaurant el guapo for some margies and food with my parents. if you are EVER in tulsa you must go there. and please sit on their rooftop patio..it's the jam.

yum! and then off to cain's...

he's just the greatest :) i also loved the pregger mom standing behind us at the concert. kudos!

blurry photo and sadly the only close photo of the band i took since T and i danced the whole time. so much fun and worth the late night arrival back home/the SUPER sleepy morning following after. love them :)
